Class K fire extinguishers are associated with kitchen fires

Paul Justine, owner of a chain of restaurants and well known to us, took us on a casual trip to one of his restaurants. I was interested in seeing the cooking preparations. I noticed that there were sets of class k fire extinguisher mounted on the kitchen walls. The Class K Fire Extinguisher is wet chemical fire extinguisher best suited for home kitchen and restaurants. Watching my surprise, he explained that these commercial hand-held cylindrical pressure vessels contain agents which can be discharged in the event of fires originating from cooking appliances including solid fuel char broilers.
